Condiments
1 cinnamon stick
1 star anise
1 tsp sesame seeds
3 cardamom pods
3 cloves
3 c. avocado oil
1/2 red onion, thinly sliced
3 cloves garlice
1/2 inch ginger, diced
3 sticks green onion, chopped
1/3 c korean red pepper powder
1/2 tsp salt
1. Toast cinnamon, start anise, sesame seeds, cardamom, and cloves, remove from heat and let cool.
2. Add oil to pot and heat for 1-2 minutes, bubbles should form around a bamboo choptstick.
3. Add red onion, garlic and ginger, fry for 4-6 minutes, then remove to a paper towel and use to top some other recipe.
4. Add green onions, toasted spices, chilie powder and salt. Turn down heat and simmer for 15 minutes.
5. Remove from heat and let cool. Then pour off into a clean jar, strain or not, as desired.
